Starch 2 tsp Preparation: 1. Prepare the shiitake in advance. Pour a little water over the dried mushrooms and cook until soft for about 30 minutes. Drain and let the mushrooms cool. 2. Shiitake, cabbage and carrots cut into strips and blanch with soy sprouts until half cooked. Squeeze gently with a towel. 3. Cut the ginger into small cubes and lightly fry in sesame oil. Mix blanched vegetables and sauteed ginger. Add green onions, soy sauce, salt, sugar, pepper and sesame seeds. Mix well. 4. Dip a sheet of rice paper in warm water for 10-15 seconds, then fill it with the vegetable mixture. Roll up small rolls no more than 2-3 centimeters in thickness and 10-12 in length. 5. Fry the finished rolls in hot sunflower oil for 5-6 minutes on each side, until golden brown. Sauce preparation: 1. Cut the peeled pineapple into small cubes. Remove the seeds from the chili and chop finely. Put the chopped ingredients in a saucepan. Add sugar, lemon juice, peach jam and ketchup. Cover with water and cook for 10 minutes. 2. Dilute the starch in a little water. Pour into the boiling sauce in a thin stream, stirring constantly. Cook for another 5 minutes. Cooking time 45 min., Medium difficulty. On a note: This is a mixed dish, so you can add vegetables that you just like best. The roll may contain sweet peppers or a wedge of grapefruit. Cabbage is one of the main ingredients of the dish, so it should remain in the vegetable spring roll anyway. But shiitake is a mushroom for everybody. It has a very specific taste, so it can be replaced with oyster mushrooms or mushrooms if desired.
